"Introducing" Chef Allyson. I am a graduate of both North Orange County School of Culinary Arts and Epicurean School of Culinary Arts.I recieved a Diploma in Culinary Arts. I studied American,Mediterrannean,Italian,and French cuisines. I have taken additional courses in Pastry,Menu Planning,Food and Beverage Management, Nutrition & Bartending. I am a member of the (ACF) American Culinary Federation and American Personal Chef Association.I am a Certified Food Manager and Safety Food Handler. I have been cooking and baking for over 20 years.After culinary school, I worked at the Fullerton Marriott Hotel under Executive Chef Raymond Nelson, as a cook rotating all stations as a prep cook, line cook, garde mangier, and desserts. During a cooking contest at the Marriott, I won First Prize for my dessert"Chocolate Raspberry Mousse and Friends".A chocolate lovers dream;Brownie cake layered with chocolate and raspberry mousse, topped w/dark chocolate cigars,drizzled with raspberry sauce.My passion in pastry and culinary have been in my spirit as early as the age of 6 years old.I remember baking lemon bars to sell at school when we played "STORE" on Friday's,in the 6th grade, I sold out every time! My baking and pastry passion led me to work for Disney World Contemporary Resort, where I worked in bread and danish. A stint in Film Production as the sole caterer for the movie "Bonneville Arizona" was a wonderful cooking experience.I would cook 3 meals daily for a cast/crew of up to 40 people.This work experience taught me if you can cook in a hotel room with a 2 stove top burner for 1 month and make people happy with creative healthy meals, you must love to Cook!
Currently, I cook for client's as a Personal Chef. I schedule cooking dates daily,weekly,bi-weekly, or monthly. I use Only the freshest ingredients, heart healthy olive oil,fresh herbs and spices,fresh meats, the freshest seafood,fresh produce, seasonal foods,and follow strict safety and sanitation procedures.
